Premier Enfant Biere de Garde
Premier Enfant is Burnside's take on the French Farmhouse Style Biere de Garde. Our version is a dry, amber, malt-balanced, warm fermented lager, brewed with cocoa nibs and dark muscovado sugar. Pilsner, munich, aromatic, and caramel vienne malts were used for a bready and cracker-like malt base. Nugget hops provide balance, but play only a small role in flavor and aroma. A lager yeast typically used in one of America's two indigenous beer styles, California Common, was warm fermented in lieu of using a more traditional neutral ale yeast. A blend of cocoa nibs from Trinidad, Madagascar, and Equador were sourced from local chocolatier Woodblock Chocolate and used in the mash to provide subtle notes of fruit and chocolate. Dark muscovado sugar was added to the kettle to increase fermentability and complement the cocoa nibs with a hint of molasses.
